I'm a linux n00b and I just rent a dedicated server (red hat). I have SSH, I could dl gzip file and tar xf it but I don't know which dir those files should be in??? and also I don't know how to add Smarty into PHP config file

Kev..
Smarty is completely separate to your server install (making life easy =) ).
Install Apache / MySQL / PHP et al. as you would normally.. and (on my boxes at least), I have /usr/local/lib/php. I placed the Smarty dir in there and added it to my php.ini file in the include_path setting.
This should then anable you to simply call require_once('Smarty.class.php');
